A Wine Dinner

 

 

Last night we attended a wine tasting dinner with some good friends, at a dinner club where we are members. The meal was beautiful, the wine was delicious and the company of friends was even better. Of course, I started out the evening with my favorite - a Cosmo :-)

It was an educational evening also, with the vineyard manager of the winery, from Italy, there to tell us about the wine making process, in his delightful Italian accent. We learned about the importance of the soil and how no chemicals are used, because of their detrimental effect on the taste of the wine.

 

The menu was course after course of beautiful and interesting food. My favorite was the first course, of scallops in a wonderfully spicy sauce, that was complimented by the crisp Chardonnay.

The dessert was a heavenly concoction of chocolate and peanut butter and served with vanilla ice cream. The perfect ending to a wonderful dinner. I enjoy these types of tasting dinners, because the portions are small, allowing you to enjoy the different courses and the wine that is served with each. We had a great experience - well worth missing The Bachelor finale :-)

Skinny Girl Margarita Cake



What kind of cake do you make your daughter for her 23rd birthday? I was looking for something fun and creative and came across this recipe for a Skinny Girl Margarita Cake. We both love these kind of low calorie margaritas and I knew I could make it even healthier by using sugar free pudding and sugar free frosting. It was an easy cake to put together and bake too. The recipe can be found here.
Some candles (3 for 23) and some pretty white sprinkles, added a festive touch to this delicious cake. We all agreed that it did taste like margaritas, with a definite flavor of lime. Each of us had one small piece, before Megan took it to share with her friends.

We celebrated Megan's birthday Saturday morning, with a breakfast of bagels, smoothies and coffee - and of course presents. When your children are older, you may not be with them on their actual birthday, you may not host a birthday party, but you take advantage of the chance to celebrate with them, even if it is in a small way. The point is to make them feel special and loved - no matter their age.

Three Photographs on Friday

 

 

First, Happy Birthday, to my beautiful daughter Megan. You are beautiful, inside and out, smart, strong and independent. Have a wonderful 23rd birthday, on Sunday. The day you were born, it was 70 degrees (here in Michigan) on March 10th - if only that were happening this year! We love you and wish you the best year ever.

Second, Melissa sent me this photo from Florida and I thought it was so cute. It is so fun to get dressed up for dinner, while on vacation. Especially, after a long day in the sun. 19 and on spring break - those are wonderful memories that help get you through the final exams to come.

Lastly, as I was going through old photos, I came across this memory from one of our lake vacations, when my girls and their cousins were little. This day, they all dressed like pirates and took a small rowboat to the island in the middle of the lake, for a treasure hunt. Their imagination was vivid and the older cousins helped the younger. They were so lucky to have those times together and create wonderful memories; brought back with the sight of a photograph.
