Easy Freezer Blueberry Jam

 

 

 

By using frozen blueberries to make this jam, I can force a little bit of spring into my life. Frozen blueberries at this time of year are so much more flavorful than the kind you find in the produce section of the grocery store. They are perfect for blueberry muffins, blueberry pancakes or any kind of baking. I always keep a bag in my freezer for when the inspiration strikes.

 

 

I had used this method to make some peach jam at the end of last summer and once in was gone, missed its freshness every morning. Using this recipe with frozen fruit was just as easy and successful - it just adds a little bit to the cooking time, as the fruit thaws and comes to boiling. You may be skeptical, but the three ingredients cook into a lovely jam. The color of the jam is beautiful and the blueberry flavor is so fresh on my morning toast. It is an easy way to bring some springtime into these endless winter days :-)

 

Easy Freezer Blueberry Jam

2 lbs frozen blueberries (2 bags)

11/2 cups Splenda baking mix (or sugar)

2 T fresh lemon juice

Splash of water

Place frozen blueberries in large pan and add sugar and lemon juice. Bring to a boil, stirring often. Boil vigorously for 40 - 50 minutes until blueberries have popped open and juice has thickened. Spoon carefully into two freezer containers. I like to use one now and freeze one for later. Enjoy!

Not a Typical Monday

 

 

 

Because of spring break, both of my daughters are home and we are taking advantage of the time. Last night we decided to go to the fairly new Cheesecake Factory for dinner, thinking that on a Monday night, the wait time would not be as bad. Since this is the first Cheesecake Factory in the area, it has been constantly busy, since it opened in the fall and we have been waiting to find the right time to go for a piece of that yummy cheesecake.

 

 

Luckily, we had all the time in the world, because we did have to wait, but it was definitely worth it. We had a wonderful time, laughing and talking all through dinner; catching up on life. And, you may be full from dinner and the huge portions served, but you don't go to The Cheesecake Factory without a piece of cheesecake to finish the night. We shared two pieces - raspberry lemon cream and chocolate tuxedo. Both were so delicious, but we all agreed the raspberry lemon flavor was our favorite.

Not our typical way to spend a Monday night and I'm thankful for the time we were able to spend together.

Oscars - Favorite Moments

 

 

 

There were many favorite moments from the Oscar telecast last night, even though it seemed like it took an incredibly long time to finally get to the major awards. Perhaps my favorite moment, was that I was able to stay home and watch in my pajamas and cozy robe with my daughters, who both happened to be home for the night. I made a yummy Tirimisu martini ( 1 1/2 ounces creme de cacao, 1 1/2 ounces Kaluha and 1 1/2 ounces half and half ), we filled out our Oscar ballots in advance and had a wonderful time discussing all the dresses as the stars walked the red carpet.

 

 

My favorite dress of the evening, was the beautiful one worn by Cate Blanchett. I thought it was the perfect Oscar dress, because I always love a ball gown for this awards show. The colors of the evening seemed to be either this nude, blush color or shimmering metallics. She looked elegant and just right for the occasion.

 

 

Another favorite moment was when Idina Menzel sang Let It Go. She looked stunningly beautiful and gave a wonderful performance. I thought she seemed a little nervous, but is probably not used to performing for the Hollywood crowd and is more comfortable on the New York stages. She is a favorite of mine, and I could listen to her sing for hours.

 

 

And, the funniest moment of the night was when Ellen was able to get the stuffy Hollywood A-Listers to leave their seats and pose for this candid photo. The fact that it had enough retweets to break twitter for a moment shows the power of social media. Ellen was funny, irreverent and perfect for injecting a little life into the broadcast. She has the ability to chide the stars for taking themselves too seriously, without being mean.
