Faith, Food and Friends

Our tradition on Good Friday for the past several years has been one of both fun and faith. We start the day with an early lunch at the Polish Yacht Club. This is a unique restaurant in Detroit's inner city and though it is called a yacht club, there are no boats in sight. You will find plenty of atmosphere and some delicious perch. We finished the meal with carrot cake and pastel jello shots, specially made for Easter.

Then, it was out into our first day of beautiful spring weather and a short drive to the historic Gesu Catholic Church, near the University of Detroit-Mercy campus. The Good Friday vigil takes place from noon to three and is a beautiful and moving service. This urban parish dates to 1921 and the former convent in the picture above, is now an active parish center. This is a thriving Jesuit parish that is extremely proud of our new Pope Francis.

After mass, we headed to a local Irish bar for a quick wrap up to our day. Faith, food and friends - the perfect way to reflect and enjoy a yearly tradition on Good Friday.

Happy Wednesday!

Quick Rice Pudding in the Crockpot

We had so much left over, cooked rice from our Thai take out, that I found myself searching Pinterest for a easy and quick way to use it. My issue with my eye has me feeling somewhat nauseous, due to medication and blurred vision, so something soothing and comforting like old fashioned rice pudding sounded perfect. This recipe, for the crock pot, was very simple and just required mixing all the ingredients together, putting the mixture in the crock pot and letting it cook on high for only 2 hours. Definitely an easy recipe when you are not feeling well. It tasted wonderful - very creamy and with flavors of cinnamon and nutmeg. I used golden raisins and they were a delicious addition. The original pin and recipe can be found here.

I head back to the ophthamologislat this morning to see if there has been any improvement. That should give an idea for further treatment. I am hoping for good news :-)

Have a great day!

Not What We Planned

Our Easter morning started out as planned with bagels, coffee and Easter baskets for the girls.

Then, things started to go downhill fast. As I was getting ready for mass, I started feeling a sharp pain in my left eye. Thinking I had something, like an eyelash or a piece of makeup, in the eye and it would get better, my family and I went to church, as planned. Instead, it got progressively worse, and we headed to urgent care, who then sent me to the ER. After, almost five hours there, it was determined I have a ulcer on my cornea and I will be seeing an ophthamologist this morning to determine treatment. Since I don't wear contacts, it may be related to my diabetes. Not exactly the Easter we had planned.

We will always laughingly remember this Easter photo of my daughters, taken in the emergency room. They were good sports and Megan happily watched, the Michigan Wolverines win their basketball game to make it to the final four - even if it was on the waiting room television. And, we all had to laugh, as our special Easter lunch, became Thai take out. I may be writing this post on pain medication, but my family is the reason I am happy.

Happy Monday!
