3 Ingredient Banana Pancakes

 

 

 

Pancakes for breakfast are my absolute favorite thing and I have made a lot of them over the years. When I saw the many recipes and methods for making these low carb pancakes, it was something I was really interested in trying. How great would it be to have this low carb option in my morning bag of tricks?

First, I tried the 2 ingredient recipe with just banana and egg. It may work for you, but mine were way too soft in texture to flip easily. The 3 ingredient option, with a small amount of flour, was much easier to work with and a lot more like regular pancake batter.

To make: mix 1 egg and 1 mashed very ripe banana in a medium bowl. Stir in 3 T flour. ( I added a handfull of frozen blueberries at this point.) Melt 1 T butter in a medium, non stick skillet and divide batter to make 3 small pancakes. Cook on both sides as you would a regular pancake.

I thought these were delicious and the texture, while soft, was not off putting at all. With a little sugar free syrup, I was able to enjoy a flavorful and decadent breakfast with negligible carbs. Healthy can be delicious!

  4. I just had to try them. I hadn't eaten breakfast, and had all the ingredients on hand, all 3! LOL OH MY...sooooo good. Super easy to make, light and fluffy. And, take it from a girl who stinks at making pancakes...these were perfection. Thanks for sharing. Next time I will have to add some blueberries too.

  5. I have to make some of these. 3 pancakes like this came up to 327 calories on my calorie counter by adding each ingredient. Not too bad for a healthy low carb breakfast! Thanks for sharing!!!

  12. I made pancakes last Sunday morning because we rarely have milk or eggs in our house (we try not to bake), but I had made cornbread to go with Steve's fabulous chili. Steve loved the pancakes and said I should make them more often. I am going to try you recipe.

  14. Good Morning Vicki, Here in England we tend not to have pancakes for breakfast, but I could certainly be persuaded as I love bananas. I am going to try your recipe as the banana pancakes look fabulous.
    Can I ask, you wrote 3 t of flour, is that tablespoons or teaspoons. I feel sure it is teaspoons, but I thought I had better check.
