Even though summer is winding down, you can still find strawberries every week at the grocery store and since we eat a lot of fresh fruit, I purchase them year round. There were a few strawberries in my refridgerator that were on the verge of going bad and I was looking for something a little sweet for breakfast this morning. This pin for an Oven Baked Strawberry Pancake was exactly what I was looking for. As always, I was happy to see that this recipe had very little added sugar, letting the sweetness come naturally from the fruit. If you want, you can sprinkle a little powered sugar on the top to make it sweeter and look pretty too. It puffs up golden brown and delicious and one slice was a little piece of heaven with my coffee this morning :-)
You could use any fruit like blueberries and peaches with this recipe, but it would be delicious with apples and perfect for fall.

ReplyDeleteThat looks beautiful, Vicki! I used to make a baked apple pancake that I got from a Detroit Pistons cookbook. I seem to have lost the cookbook. It was a yummy recipe, though, and yours looks great too. Time for me to (continue) enjoying the fruits of summer because they won't be available for too much longer. I'm thinking peaches, strawberries, and watermelon.
