This soup was supposed to be our Christmas Eve meal - we would have it between brunch with my family and Christmas Eve mass. I liked the idea that I could put it in the crock pot before I left for the day, and it would be ready when we got back home. Well, plans changed and we didn't need more food after all, so the ingredients have been in my pantry and fridge ready for me to try another time.
I decided to make it on Friday, so Melissa would have a home made meal after she got home from work that day. She was leaving to go back to college the next day too, so I know she appreciated me spoiling her a little, before she left.
This is one of the easiest soups I have ever made. I lightened it up a little by using 2% evaporated milk, and the flavor was still good. It has a very rich tasting broth and the combination of the fresh spinach and the cheese tortelinni are delicious. The original pin and recipe can be found here.
My empty nest is quiet again, the holidays are a fun memory and I'm looking forward to a peaceful Monday, that includes a walk in the snow with Cooper later. We will be back to our routine and she will be glad to have my attention during the day, once again. Have a great start to your week :-)
