White Chicken Chili for Football Watching Weekends



I am linking this post with Kelly's Korner "show us your life series" and am happy to be focusing on one of my favorite pastimes - tailgating. Specifically, tailgate food. I have shared some other great tailgate recipes here and here, but this recipe for White Chicken Chili is perfect for those chilly game days, when something hot is needed to warm you up. This is also a great meal on cold fall or winter days, when you are cozy at home, watching football on television.

This recipe is quick to put together and is easy enough that you can make it in the morning, before you head out to the game. It doesn't need to cook for hours to still have a lot of great flavor. It will stay hot at the game by placing it in a large thermos.

Recipe for White Chicken Chili

1 T canola oil

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

2 15 oz cans cannellini beans, drained and rinsed

1 15 oz cans navy beans, drained and rinsed

3 cups diced Rotisserie chicken meat

1 4 oz can diced green chilies

1/4 tsp cayenne pepper

2 tsp cumin

1 tsp oregano

salt and pepper to taste

Shredded Monterey Jack cheese and sliced green onions for garnish

Heat oil over medium heat in dutch oven or heavy saucepan. Add onion and garlic. Cook 2-3 minutes. Process one cup chicken broth and one can cannellini beans in a blender until smooth. Add to onion and garlic mixture. Stir in remaining ingredients. Bring to a boil, then turn down heat to low. Simmer 20-30 minutes. Garnish with shredded cheese and green onions.

We will be cheering on the Spartans and the Wolverines this weekend. Lots of football and family time to look forward to. Have a wonderful weekend :-)

    Funnily enough, every time I start to make it, I have missing ingredients, and it ends up red chili....lol.

  6. O, I meant to ask...what are cannellini beans and would I find them in the canned bean section...or do you buy them dry and cook them?
