Mexican Rice and Bean Salad

 

 

 

A meatless meal in the summertime, especially on a hot day is a perfect choice. This recipe for Mexican Rice and Bean Salad, is very filling and light at the same time. It's also full of healthy ingredients and fiber from the brown rice, black and kidney beans. The lightness comes from how you dress this salad - just the juice of a lime and a little salt, squeezed over the top and mixed in after everything is combined. I just love salads that are not swimming in a dressing that overpowers the taste of the fresh ingredients and this one is delicious.

The taste was fresh, and had a delightful crunch from the chopped vegetables. The recipe says to let the salad sit in your fridge for one hour, so the flavors combine, but I think longer would even be better for the taste. As always, since this does have quite a few carbs from the rice, beans and corn, I was able to enjoy this by watching my portion size. And, the leftovers will make a great lunch tomorrow :-)

 

Mexican Rice and Bean Salad


2 cups uncooked brown rice ( 4 cups cooked)

1 15 ounce can kidney beans, rinsed and drained

1 15 ounce can black beans, rinsed and drained

1 cup frozen corn, cooked

1/2 small red onion, diced

1 green pepper, chopped small

1 small can green chilies

1 lime

1/4 cup chopped cilantro

1 tsp minced garlic

1 1/2 tsp ground cumin

Salt to taste


Cook rice and let cool slightly. In a large salad bowl combine the rice, beans, corn, onion, green pepper, green chilies, garlic, cilantro and cumin. Lightly toss all ingredients to mix well. Squeeze juice of one lime over top, sprinkle with salt to taste and mix well again. Refrigerate for one hour or longer, so the flavors combine. Enjoy!

An August Pool Day

 

 

 

A sunny day stretched out before us, full of sunshine and blue skies. Should we eat lunch on this lovely patio, or head right to the pool and embrace the summer day and enjoy a casual poolside snack? When August arrives, the summer days seem like the kind of days you need to savor. The month seems to fly by, as fall preparations and plans beckon. There are many things to look forward to, but it is these final days of summer that I want to hold on to.

 

 

No, I'm not ready for summer to end. I want many more pool days, spent in a lounge chair next to the blue pool; as blue as the sky in August. And, I was lucky enough to have a unexpected visit from my daughter, Megan, this weekend. Our choice for the day, was to relax by the pool, catching up on her life and hearing in her voice, how happy she is in Pittsburgh.

Life on this late summer day was very good :-)

Dining Room Update - Decisions

 

 

 

My dining room update has been put on hold, while I have been distracted by vacation, outside gardening and furniture painting projects. Since things are winding down outside, I am ready to get back to my plans. Decisions have been made and I have placed some orders.

First, this neutral floral fabric will be used to recover the six dining room chairs. This should be a fast and easy project, though I have to admit, it has been years since I have attempted to do this. But, I remember it being pretty simple. I just need to find my staple gun :-)

 

 

This fabric from Calico Corners will pair well with the chair fabric and will be used for a table runner. The colors will also blend with a foyer rug that is adjacent to the space and some pillows I already made. Or, I may find another contrasting print (maybe a stripe) for some new pillows. Time to get out my sewing machine!

 

 

I decided on this oversize clock for a statement wall because it would blend well with the wood tones already in the space. This was my hardest decision, because I couldn't decide to go formal or rustic, but decided to keep the space a little more traditional.

 

 

Here is where I am adding the rustic and less formal elements with one of these wood shelves from Pottery Barn and whimsical accessories. I decided on one long shelf instead of stacking two or three and adding height with the accessories.

I am looking forward to finishing this up pretty fast once I start, so look for a reveal post within the next few weeks. An updated dining room, just in time for fall, sounds like perfect timing.
