Turkey Meatball Spinach Soup

 

 

 

Nothing makes me happier when I am stuck inside during a snow storm is having the ingredients in my pantry to make a hearty soup. I love taking my time, letting the flavors develop and adding the different ingredients in stages to build even more flavor. It may be wicked outside, but your house seems that much cozier with a pot of soup on the stove.

This recipe is from my Canadian friend Heather at New House New Home and from the first time I saw her post, it has been on my list to try. I love orzo pasta in anything and the turkey meatballs sounded delicious. The meatballs came together easily - if you have never made meatballs before, this is a great recipe to start with. The only change I made is that I made mine smaller, so I had around 60 1/2 inch meatballs to add to the soup.

This had a wonderful aroma and we loved it! Cooking the meatballs in the broth makes them moist and delicious - none of that dryness ground turkey can have. The flavors of the spinach and orzo, along with the turkey meatballs all come together to make a terrific and very filling soup. Make sure and put this on your list to make before winter is through :-)

  1. Looks delicious. I am always looking for soup recipes without tomato, as I can no longer eat them. This I could easily sub breadcrumbs for GF ones and either use GF pasta or just add rice. Perfect!!

  5. Sounds just like Italian Wedding Soup. Only I use escarole instead of spinach. Wonderful!!
