Apple Cider Doughnut Muffins

My craving for apple cider doughnuts this fall, has led me to remember a quick and easy muffin recipe that tastes just like a fresh doughnut, complete with the yummy cinnamon and sugar topping. And, to make things even easier, they are made by using a spice cake mix, with apple cider substituted for the water. Also, to make me feel better about indulging, they are much healthier than a fried doughnut :-)

I got up early this morning and put together this recipe in just a few minutes. The kitchen smelled amazing as they were baking; filling the morning with the classic fall scents of cinnamon, spices and apples. My favorite coffee was so good with a freshly baked, warm muffin that tasted just like a doughnut from the apple orchard.

Here is how I made these delicious Apple Cider Doughnut Muffins - follow directions for cupcakes using a Betty Crocker spice cake mix. Substitute apple cider for the water. When muffins are cool, dip tops in melted butter and cinnamon sugar (I used a sugar/stevia blend from Dominos) mix. Enjoy!

Happy Thursday!
