Cashew Chicken - Crock Pot Version

 

Cashew Chicken cooked in the crock pot? I have to admit, I was a skeptic. This recipe on Pinterest caught my eye and since it was from a site I have found to have pretty good recipes, I decided to give it a try. It was really quick to put together, and since it only needed to cook 3 hours, on low, my late start getting it in the crock pot was no problem.

It turned out very good and I would definitely make this crock pot version again. The chicken had a great flavor, was just a little spicy and the addition of the cashews, at the end, kept them nice and crunchy. I also added some celery, right before serving, to give it even more color and texture. To keep things healthy, I used Splenda brown sugar, low sodium soy sauce and served the chicken with brown rice. My pin and the recipe can be found here.

Melissa sent me this photo from Florida, of her view of the Gulf of Mexico and I received it on my phone as I was walking, with a cold wind swirling around me and being very careful not to slip on the ice. I have to admit, I am a little jealous. She should have a great Spring Break, soaking up the sun and relaxing on the beach.
